
Bean and Brown Rice Salad

Serving size 1 cup
1 can black-eyed peas, 15 oz, drained
1 1/2 cups brown rice, cooked
3 green onions, chopped
1 celery stalk, thinly sliced
1 tomato, diced
1/4 cup parsley, chopped
1/2 cup lemon juice
1 teaspoon olive oil
3 cloves garlic, chopped
Combine the black-eyed peas, brown rice, green onions, celery, tomato, and parsley in a salad bowl and mix well. In a separate bowl, whisk together the lemon juice, olive oil, salt, and garlic. Pour the dressing over the salad and toss. Chill 1 to 2 hours before serving this delicious and healthy salad that is full of fiber and minerals! Serve over a bed of leafy greens and enjoy with a whole grain bread or wheat crackers. This is a great meal for a potluck and it also makes a versatile dish for leftovers.
