This delicious and healthy salad is full of fiber and minerals! Serve over a bed of leafy greens for some added raw nutrition. This is a great meal for a potluck as it is easy to make in large quantities and is hearty. It also makes a versatile dish for leftovers, just scoop some in a tupperwear and you’ve got lunch ready to go. The beans will give you your protein and the brown rice will clean you out!
Makes 5 cups
- 1 can black-eyed peas (or your favorite bean), drained
- 1 and 1/2 cups brown rice, cooked
- 3 green onions, chopped
- 1 celery stalk, thinly sliced
- 1 tomato, diced
- 1/4 cup parsley, chopped
- 1/2 cup lemon juice
- 1 teaspoon olive oil
- 3 cloves garlic, chopped
Combine the black-eyed peas (or your favorite beans), brown rice, green onions, celery, tomato, and parsley in a salad bowl and mix well. In a separate bowl, whisk together the lemon juice, olive oil, salt, and garlic. Pour the dressing over the salad and toss. Chill 1 to 2 hours before serving.
