The pimento is what gives this yummy dip the yellow hue and delicious smoky flavor.  This healthy dip looks like cheese sauce but has none of the cholesterol and less fat.  In addition it’s packed with fiber and protein.  It can be covered and stored in the refrigerator for up to one week and will transform an ordinary weekday veggie dinner into an impromptu feast!  Serve with crackers, over steamed veggies, or top a casserole with this healthy, tasty spread instead of using cheese.

Yields 2 cups

  • 1 can great northern beans (or white beans)beanspread
  • 1/2 cup pimento pieces, drained
  • 6 tablespoons nutritional yeast
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons tahini
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon mustard
  • 1/2 teaspoon salt

Place all the ingredients in a blender or food and process for several minutes until the mixture is completely smooth. You will need to stop a few times to scrape down the sides of the processor with a spatula and continue blending.
